Today I wanted to share the taco bowls that we made a couple of days ago. I had the idea of tacos for dinner but I wasn’t completely sold on it so I kept thinking. I then had an Ah Hah! moment and taco bowls came to mind.
I started off with chopping fresh onion and bell peppers and added them to a pan with olive oil.
I then added some garlic to the mix and let it simmer for about 10 minutes.
I get this ground Turkey from Aldi and it is only 1.89 for this one pound package!!
These are the seasonings that I used, all of which I bought from Aldi with the exception of the salt free seasoning, which came from dollar tree.
Olive oil, of course from Aldi. See a trend? 😉
I then added the ground Turkey in along with all of the seasonings and continued to let everything simmer and mingle for about 20 minutes until the Turkey was thoroughly cooked.
While the turkey was cooking, I had a pan of rice cooking on the stove to go along with it.
Once everything was done it was time to create our masterpiece taco bowls. I added black beans, corn, and rice to mine and plenty of fresh cracked pepper; Packed with protein, fiber, and nutrients to keep us full for the rest of the night.
I also added some sharp cheddar cheese (my favorite 😬), and hot sauce on top once I mixed everything up.
It was absolutely amazing and filling and the best part is that we had leftovers for the next day, so I killed two days with one pan (see what I did there? 😉).
So simple to make and will for sure be a crowd pleaser because of how much it can be customized to fit your family. You can throw avocado on top or add more/different veggies. You could make it a vegan meal and use beyond meat if you’d like. The options are endless and delicious 😋.
